The mountain grazing season is now coming to an end, our cows and steers left at the beginning of June and will return to the farm at the end of September... summer in the alpine pastures is something we strongly believe in because grazing is the natural habitat for these animals and the ideal solution for those who, like us, believe in a type of farming that is completely different from intensive farming. In our dear Asiago plateau, it is usually the dairy cows that are sent to spend the summer, often when they are not producing milk, while the beef cattle remain in the barns to be fattened, which is why many in the sector do not understand our choice... In reality, it is a choice perfectly in line with our concept of animal husbandry and nutrition: the advantages of grazing are many, first and foremost the fact that the cattle here have the opportunity to choose the varieties of grass they prefer at that moment and that are best suited to their well-being. The extreme freedom of movement is another reason why we choose to take the animals to the mountains; here, in fact, they are free to move in an environment that is much larger and more diverse (the pasture, the woods, the water pools...) than any enclosure/barn on the farm, no matter how large it is (and we do not own boundless structures!). Regarding the quality of the meat, there is no doubt that it can be considered excellent for taste and tenderness: think of Argentine beef, a synonym all over the world for an extraordinary product... well, the goodness and peculiarities of Argentine beef are due precisely to the completely natural method by which the cattle are raised. Left to live wild in the vast pampas, the animals feed exclusively on grass. It is well known that this type of farming encourages the production in the animal of substances that help make the meat tender, tasty, and healthy. Ok ok, we don't want to exaggerate too much, our plateau is not Argentina, but... at least we try ;-)
